MemoryLaneVintiques had warm apple cider in mind when we hand picked this item in the fall of 2022. We are huge collectors of pottery and ceramics and Claire Weissberg is a name we have grown to know very well.
A native New Yorker, Claire studied pottery with Clary Illian in Iowa, and with Chiyoichi Shimizu in Japan. She received her MFA in ceramics from the Rhode Island School of Design, and has been making Urban Folk Pottery in Brooklyn since 1989.
Claire throws her pottery on the wheel, slip trails and carves on the leather hard pieces, and glazes using wax resist. She uses a cone 6 porcelain and lead-free glazes and her creations are functional ceramic-ware she nicknamed "Claire Ware". They are microwave and dishwasher safe but direct heat and oven use is not recommended.
APPLE CIDER RECIPE
Fresh apples: As you can see, We enjoy making cider with a couple of apples. But, you can feel free to use whichever varieties, mix and colors that you love. I recommend a mix of tart ( Green Granny Smith) and sweet ( Red Honey Crisp) apples.
Oranges: Fresh oranges are essential to giving cider its trademark citrus flavor. That said, if you would like to reduce the tartness of this cider, you are welcome to peel the oranges before adding them to the cider.
Sweetener: Just about any kind of sweetener will work here. I typically use either maple syrup or brown sugar. And of course, please add whatever amount you prefer, to taste.
Warming spices: We typically add cinnamon sticks and whole cloves to my cider, plus maybe some whole allspice, nutmeg and/or fresh ginger if I happen to have it on hand. But if you only have dried powdered spices, those will work too!
Water: This will be the base of your cider.
Combine your ingredients in a stockpot. Add the apples, oranges, and spices to a large stockpot. Then cover with water, leaving about an inch or two of space at the top of the stockpot.
Simmer. Heat the cider over high heat until it reaches a simmer. Then reduce heat to medium-low, cover and simmer for about 2 hours, or until the apples are completely soft.
Mash the apples and oranges. Using a potato masher or a wooden spoon, take a minute to mash all of the apples and oranges against the side of the stockpot to release more of their flavors. Then cover and let the cider simmer a bit longer.
Strain. Then, using a fine-mesh strainer or a colande , strain out all of the solids (apples, oranges, spices), pressing them against the strainer to release all of their juices....then discard solids.
Sweeten. Then stir in your desired amount of sweetener, to taste.
Serve warm out of this beautiful Claire Ware Teapot!!!!
